Adam’s 1st Thanksgiving 11/05
Yesterday was my Moms playgroup annual Thanksgiving brunch. Not only did my good friend Penny open her house up for this event, she made her Pumpkin Cheesecake! Holy Hannah, I am love with this cheesecake. I even snagged an extra piece to take home, which I ate in the privacy of my room, with the door closed. There was no way I was sharing this with my 4 lovely, wonderful, darling children..HAHAHA! Penny was nice enough to post her recipe for all the playgroup peeps. I will be making this really soon. Maybe next week or for Christmas! Now I wish I had a picture to share, just reading the recipe doesn’t do it justice!
CRUST
3/4 C Graham cracker crumbs
1/2 C Finely chopped pecans
1/4 C Firmly packed light brown sugar
1/4 C regular sugar
1/2 stick butter, melted and cooled
Combine everything into a buttered springform pan, raising the edges about 1/2 inch.
Chill for 1 hr
Filling for Pumpkin Cheesecake
1 1/2 C solid packed (NOT pie filling)
3 Lrg eggs
1 1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Ground ginger
1/2 tsp Salt
1/2 C Firmly packed light brown sugar
3 x 8 oz packages cream cheese cut into pieces and softened
1/2 C Granulated sugar
2 Tbs Heavy cream
1Tbs Cornstarch
1 tsp Vanilla
1 Tbs Bourbon (optional)
In a bowl whisk together 1st 7 ingredients
In a separate lrg bowl cream, cream cheese, gran sugar.
Beat in cream, cornstarch, vanilla, bourbon, and pumpkin mix until smooth
Pour onto crust
Bake in the middle of preheated 350 degree oven for 50 - 55 mins, or until center is just set. Let cool for 5 mins
TOPPING
2 C Sour cream
2Tbs regular sugar
1 Tbs bourbon
Whisk together, spread over top, bake for 5 mins. Cool on rack. Chill overnight. Garnish w/ pecans
I have been really busy with the kids and trying to get ready for Thanksgiving. I am cooking a turkey today to take to my playgroups Thanksgiving Brunch tomorrow. Since I don’t have any new pictures to show off, I thought I would post some of my recent scrapbook layouts
I have not been a very good blogger for the past 2 weeks. I have wanted to blog, but sometimes there just isn’t enough time in the day.
My last blog post was about Susan taking her ASVBs for the Army. Well she did well but missed it by 7 points. She was really bummed but her SGT told her not to worry he had to take it 3 times. Positive news she is only 1/2% away from meeting her measurements!
On the 28th I took my kiddos to their first Halloween parade! We even parked in a cemetery…ohhh spooky! The parade was nice, lots of high school bands and to many politicians. I thought Adam would really like the bands with the loud drums, but I should have known his favorite would be the firetrucks!
Halloween was great. Friday night I took the boys to a Harvest party at church. Before we could go I had to do some repair work on Elias’ costume. He wore it to school over his clothes and it was ripped in three different places at the waist. The party was awesome! Great food, skating, fun games and crafts. At the end we watched The Great Pumpkin.
And Adam…he hates his picture taken, especially when you are telling him you are going to take his photo!
Trick or Treating was wonderful! The weather was perfect. We didn’t need to bundle up or take blankets. The moon was almost full, which created a perfect spooky haunted night! I was only able to get 2 shots of the boys, because I forgot to turn my camera off. So the battery was dead. I was so proud of them, we walked the whole neighborhood. Usually the kids get tired and we all have to go get the cars to pick them up. I want to thank Melissa, for a wonderful night in her neighborhood and the lovely treats and drinks she had out when we got finished!

This weekend the boys and I had some fall fun with the thousands upon thousands of leaves in our front yard.
We worked for almost an hour getting the perfect mountain of leaves built. Once they were satisfied the running and jumping began. I of course took an enormous amount of photos & videos
